So in other words it is an extremely healthy superfood. If you haven't tried it yet you need to. It is so versatile and easy to make. If you don't like the veggies I use you can substitute any that you do like. I'm sure this recipe would work great with zucchini, tomatoes, etc.
You will need:
1 cup, Organic quinoa
Asparagus cut into 1 inch pieces, I used a whole bundle
Baby Bella mushrooms, sliced, about 6-10 depending on your preference
1 Red Bell Pepper, diced
1-1 1/2 cups choice of cheese, I used colby jack
about an ounce of cream cheese

Steamer basket, I advise against boiling as your veggies will lose the majority of their nutrients.
This recipe makes about 3 servings 4 if you plan to use this as a side dish.
Bring 2 cups water to a rapid boil, add quinoa and boil for a few minutes. When water is almost completely absorbed turn heat off and leave covered. Quinoa is done when you can see a white edge on the grain.
Steam veggies until desired tenderness. combine with quinoa, shredded cheese and cream cheese. mix well and season to taste. I used Himalayan pink salt, garlic powder and pepper.
Serve hot and enjoy!! you can omit the veggies for picky kids and its a healthier version of mac and cheese!
